Vegan Sausage Stuffed Potato Dumplings



These vegan sausage stuffed potato dumplings are a savory and satisfying dish, perfect for a hearty meal. The combination of creamy mashed potatoes, flavorful vegan sausage, and aromatic spices makes these dumplings a crowd-pleaser.

Ingredients:

  • 4 large potatoes
  • 1 cup vegan sausage, crumbled
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup nutritional yeast
  • 1/4 cup vegan cream cheese
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1/4 cup vegan butter
  • Fresh parsley, chopped for garnish

Instructions:

Preheat the oven to 400F 200C

Poke holes in the potatoes with a fork and bake them for about 1 hour, or until tender

While the potatoes are baking, heat the olive oil in a pan over medium heat

Add the onion and garlic, and saut until softened

Add the crumbled vegan sausage to the pan and cook until browned

Remove the potatoes from the oven and let them cool slightly

Cut each potato in half lengthwise and scoop out the flesh, leaving a thin layer to keep the skins intact

In a bowl, mash the potato flesh with the vegan cream cheese, nutritional yeast, salt, and pepper

Fold in the cooked sausage mixture until well combined

Stuff each potato skin with the sausage-potato mixture

Melt the vegan butter and brush it over the stuffed potatoes

Place the stuffed potatoes on a baking sheet and bake for an additional 15-20 minutes, or until heated through and lightly browned

Garnish with fresh parsley before serving
