Savory Flourless Baked Cheese Crepes



These savory flourless baked cheese crepes are not only delicious but also keto-friendly and gluten-free. They are filled with a mixture of cheese and almond flour, making them perfect for those following a low-carb lifestyle. Enjoy them for breakfast, brunch, or as a satisfying snack!

Ingredients:

  • 4 large eggs
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup almond flour
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • Sliced ham, cooked bacon, or desired fillings
  • Fresh herbs for garnish optional

Instructions:

Preheat the oven to 375F 190C

In a mixing bowl, whisk together the eggs, mozzarella cheese, Parmesan cheese, almond flour, garlic powder, onion powder, salt, and pepper until well combined

Grease a non-stick crepe pan or skillet lightly with oil or butter and heat over medium heat

Pour a small amount of the batter into the pan, swirling it around to coat the bottom evenly, and cook for about 2 minutes or until the edges start to lift

Carefully flip the crepe and cook for an additional 1-2 minutes until set

Repeat with the remaining batter, stacking the crepes on a plate as you go

Once all the crepes are cooked, place a slice of ham or cooked bacon onto each crepe, then roll them up and place them seam-side down in a baking dish

Bake in the preheated oven for 10-12 minutes until the crepes are heated through and the cheese is melted

Garnish with fresh herbs if desired before serving
