Vegan Mediterranean Chickpea 'Meatballs'



These Vegan Mediterranean Chickpea 'Meatballs' are packed with flavor and protein, making them a delicious and healthy alternative to traditional meatballs. They're perfect for serving as an appetizer, in sandwiches, or as a main dish alongside pasta or grains.

Ingredients:

  • 2 cups cooked chickpeas, drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 2 tablespoons finely chopped fresh parsley
  • 1 tablespoon ground flaxseed + 3 tablespoons water flax egg
  • 1 tablespoon tomato paste
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil, for cooking

Instructions:

Preheat oven to 375F 190C

In a small bowl, mix together ground flaxseed and water

Let it sit for 5 minutes to thicken

In a food processor, combine chickpeas, breadcrumbs, red onion, garlic, parsley, flax egg, tomato paste, cumin, smoked paprika, salt, and pepper

Pulse until well combined and the mixture holds together

Form the mixture into golf ball-sized balls and place them on a lined baking sheet

Brush the tops of the chickpea balls with olive oil

Bake in the preheated oven for 25-30 minutes, or until golden brown and firm

Serve warm with your favorite marinara sauce or in a pita with salad and tahini dressing
