For any event, these Avocado Mint Cream Bars are a delicious and refreshing treat. The flavor is great when avocado and fresh mint are mixed together, and the almond flour crust gives it a nice crunch.
Ingredients:
- 2 ripe avocados
- 1/4 cup coconut cream
- 1/4 cup fresh mint leaves
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1 cup almond flour
- 1/4 cup coconut oil, melted
- 1/4 cup coconut sugar
- Pinch of salt
Instructions:
Put the mint leaves, maple syrup, vanilla extract, avocados, and coconut cream in a food processor
Blend the mixture until it is smooth
Melt the coconut oil and add the coconut sugar and a pinch of salt to another bowl
Mix the ingredients together until a dough forms
To make a crust, press the dough into the bottom of a square baking dish that has been lined with parchment paper
Cover the crust with an even layer of the avocado mint cream
Put it in the freezer for two to three hours, or until it gets hard
The bars should be cut out of the dough once it is firm
